Catalogna chicory is a predominantly winter crop, with harvests beginning in November and ending in late April. The long cultivation period is ensured by scalar transplanting and using the different varieties in succession. Among the local varieties marketed by La Preferita OP is the Molfettese variety, which has a “head” at the base characterized by the abundant presence of leaflets between the shoots. The latter have a whitish coloration with more or less intense shades of green and are also called puntarelle.
