One of Puglia’s symbols par excellence are turnip greens. The cultivation of this cutting vegetable, in Apulia, has always been practiced with unique and typical methods, using varieties named after the location of cultivation or the length of the growing cycle, the most likely harvest time, the size of the inflorescence or the combination of two or more characteristics. La Preferita harvests turnip greens by cutting the inflorescences, before the flower buds open, with the most tender leaves inserted on the stem.
